Beet Curry
Makes: 3 Servings Ingredients:
3 Cups Lentils 1 Tablespoon Salt 3 Tablespoons Cumin 12 Cups Water 1 1/4 Tablespoons Turmeric 2 Tablespoons Coriander 6 Beets - Diced 8 Dried Red Chilis - Crushed 8 Garlic Cloves - Crushed 2 Purple Onions - Diced
Directions:
1) Boil 12 cups of water. Add the lentils & then lower the temperature. Stir occassionally. 2) Grease a pan. Add onions, garlic, and beets & saute. Stir occasionally. 3) Cook for approximately 15 minutes. 4) Add pan contents to the lentils. Continue to simmer & stir until lentils are finished. 5) Serve!
